Father’s Day is approaching and what better way to show your fathers, father figures, or husbands some appreciation than with a home cooked meal that the whole family can partake in and enjoy while bonding. Did I mention you will save time and money versus actually going out to a restaurant! Don’t get caught up in the Father’s Day traffic and risk having to wait, instead cook!
There are several easy dinner recipes that can be prepared for the man of the hour. Remember to find things that he likes and have fun with it! For those fathers who love steak and tacos like my dad, try this delicious recipe I recommend.
Grilled Steak Tacos with Cilantro Chimichurri Sauce
Steak and Marinade:
2 lbs Flank Steak
1 sliced sweet onion for grilling
Juice of 1 orange
Juice of 2 limes
1/3 C soy sauce
1/3 C olive oil
1/2 tsp sugar
4 smashed, chopped garlic cloves
1/2 C chopped cilantro
Directions: In a bowl, mix together ingredients for marinade. Place steak and onions in a gallon size Ziploc bag and pour marinade over, sealing and turning several times to coat well. Let sit at room temp for at least 30 minutes ( or 3 hours in the fridge before grilling). When grilling make sure to cook for ten minutes on both sides over medium heat.
1 bunch Cilantro or about 1 cup packed
1 bunch Italian Parsley- about 1 cup packed
1/4 C fresh lime juice (1-2 limes)
1/2 C olive oil
1/4 C chopped onion
2 garlic cloves
2 tsp ground cumin
2 tsp ground coriander
3/4 tsp kosher salt
1/2 a jalapeño pepper
Chimichurri Directions: In a food processor, place jalapeno, garlic, onion, and pulse several times until chopped. Add cilantro and Italian parsley pulse again. Add oil, lime juice, cumin, coriander, and salt. Pulse until combined. Set aside in small serving bowl.
Final Preparation: Take the torillas shells and grill them for a few minutes. Place the cut flank steak in the tortilla, top with the chimichurri sauce, and a little pico de gallo (optional) and YOU ARE DONE!
