In keeping with are Superbowl themed party finger food ideas, these Creamy Cilantro Chicken Quesadillas came to mind. I am always trying to find ways to amp up the flavor in foods that I have had in the past; and quesadillas are no exception.
Adding cilantro and cream cheese made these the best quesadillas I have ever had! Seriously! This has been my signature dish for a while, and whenever my family and friends want me to cook for them; they always request these! The cilantro just brightens up the dish and pairs perfectly with the cheeses in the quesadilla. And if you are a cheese lover like me, adding cream cheese to a quesadilla already packed with cheddar cheese is heaven sent! These Creamy Chicken Cilantro Quesadillas are going to be a hit at your Superbowl party!
INGREDIENTS:
7 flour tortillas
3 cups of chicken, cooked and shredded
3 cups of cheddar cheese, shredded
1 8 oz package of cream cheese, room temperature
1/4 cup of heavy whipping cream
1 cup of cilantro
1/2 teaspoon of garlic powder
1/2 teaspoon of paprika
salt and pepper to taste
1 tbsp of butter or cooking spray
DIRECTIONS:
1. In a blender, blend the cream cheese, heavy whipping cream, cilantro, garlic powder, paprika, and salt and pepper for about 2 minutes. The consistency should be like a sauce.
2. In a small pan melt the butter or use cooking spray to coat your pan so the tortilla does not stick. Add the tortilla to the pan and heat for a few seconds and then flip it over.
3. Pour 2 tbsp of the cilantro cream cheese sauce on the tortilla. Top with a third of the chicken and cheese on one half of the tortilla. Fold the side of the tortilla without the chicken and cheese on top of the side that has the chicken and cheese on it. (Think sandwich here!) Flip the quesadilla and let it cook until it is golden brown.
4. Repeat with the remaining ingredients. Cut into triangles and serve immediately with sour cream and salsa! Enjoy!
