We all enjoy eating seafood right? Want to shake up your traditional recipe for fish? Not only is fish very delicious, but good for you. This sea creature is full of omega-3 acids, a good catch and considered essential for the body to operate correctly. Since our generation is crazy about diet and exercise, here is a fun way to get those nutrients that our body desperately crave.
Tropical Mango Spinach Salmon Salad
The ingredients needed for this recipe is available in your local fish market or grocery store. The following items are needed to create this one of a kind dish:
- Salmon (or you can use any other fish that is on sale and strong enough to handle the flames from a grill)
- Olive oil
- Red onion
- Mango (make sure you smell the mango to ensure that its ripe!)
- Brown sugar (if you can not find brown sugar, honey will work just fine!)
Drizzle salmon (or your fish of choice) with olive oil. Season with salt and pepper and set aside. In the meantime, grab a bowl and squeeze in the lemon juice.Place the sliced avocado in the lemon juice. This will slow down the oxidation process. Let it sit in the juice for 10 minutes. Take out the avocado then add the brown sugar, and slowly drizzle in some olive oil while whisking the mixture. Olive oil acts as a binding agent for your dressing. Using a hot grill pan or grill, place fish skin side down. Let it cook for at least 5-10 minutes per side. You want the fish to still be moist, and not over cooked! On a plate, arrange the spinach, sliced onions, cucumbers, and mango. Top with the salmon and pour the dressing over your salad. Who said eating healthy can’t be fun and delicious?
