To usher in the new year many families partake in the long standing tradition of eating collard greens which symbolize wealth and economic fortune. You want to start your new years off right? Start it by eating a dish that will bring prosperity and fortune into your life. Enjoy my recipe below for Kickin Collard Greens!
1 pound of collard greens, washed and roughly chopped
8 slices of bacon, chopped
1/2 pound of smoked turkey, chopped
1 large Vidalia onion, chopped
3 cloves of garlic
2 teaspoons of salt
1 teaspoon of black pepper
1 teaspoon of paprika
1 teaspoon of sugar
2 cups of chicken stock
1/4 cup of apple cider vinegar
1. Heat your olive oil in a large pot over medium-high heat. Add the bacon and smoked turkey and cook until both are slightly firm. Remove from the pot, and add the onions and cook until translucent. Once translucent add the garlic and cook for 1 minute. Then add the collard greens and cook until they start to wilt.
2. Add the bacon and turkey back into the pot. Then pour in the chicken broth, black pepper, paprika, salt, sugar, and the apple cider vinegar. Reduce the heat to low, cover the pot, and simmer for 1 hour until the greens are tender.
