As summer starts to come to an end, I find myself going to more cookouts which let’s me bring lots of fun dishes for friends and family to enjoy. With the summer heat it can get the best of us. I try to create recipes that don’t require a lot of cooking during those hot days. This recipe doesn’t require turning on the oven. Walking in the door with this in hand will make your friends want to skip straight to dessert. You can also add your own touch to this recipe by adding your favorite seasonal berries. You really can’t go wrong with this cool summer dessert.
Ingredients
1 box of vanilla wafers or graham crackers 12 ounces
1 ½ sticks unsalted butter, melted
¼ cup brown sugar
8 ounces cream cheese, softened
3 tablespoons sugar
1 container whipped topping, thawed, 8 ounces
1 pint fresh strawberries, sliced
2 fresh kiwis, peeled and sliced
Directions
Grind crackers in a food processor until coarse crumbs form. Add butter and brown sugar. Process until crumbs are evenly moistened. In a 9-inch diameter tart pan with a removable bottom, press crumb mixture firmly into bottom and up the sides.
In a medium bowl, using an electric mixer, beat the cream cheese and sugar together on high speed for about 1 minute, until stiff peaks form. Fold in the whipped topping. Scoop mixture into tart crust and spread evenly.
Arrange the sliced fruit over the cream cheese mixture. Cover and place in the refrigerator for 2-3 hours before serving.
